Crunchy Granola Bars


Dry ingredients:
1 and ¼ cups of rolled oats
¼ cup raw almonds
¼ cup raw cashew nuts
¼ cup raw seeds (I use a mix of sesame and pepitas)
½ cup chopped medjool dates (about 6 dates)
½ cup shredded coconut
½ tsp cinnamon

Wet ingredients:
¼ cup brown rice malt syrup
1 tablespoon of hulled tahini
2 tablespoons coconut oil


  1. Heat the oven to 180C
  2. Mix the dry ingredients in a bowl until well combined
  3. Mix the wet ingredients together. If the coconut oil is hard, place all the wet ingredients into a saucepan and heat on a low heat until oil has melted and ingredients are evenly combined
  4. Pour the wet ingredients over the dry and mix together until the wet ingredients have completely coated the dry ones
  5. Line a baking tray (approx 12 x 16cm) with baking paper
  6. Place the granola into the baking tray and flatten down with the back of a spoon
  7. Bake for around 25 minutes, until the granola is golden
  8. Allow the bars to cool before chopping
  9. Enjoy!
